Crunchy Ramen Noodle Slaw with Mandarin Oranges

Tonight’s recipe post is brought to you by my husband watching a game I couldn’t care less about. While he’s yelling at the TV, I finally sat down and wrote out a recipe people have been asking me for years.

This crunchy ramen noodle slaw shows up at just about every family dinner or BBQ we go to. It’s sweet, salty, crunchy, and somehow always the first thing to disappear.

Usually when people ask for the recipe I say something like, “I don’t know… I just throw stuff in a bowl.” So tonight I actually paid attention while I made it so I could finally write it down.

Fair warning though — if you ask me for the recipe at the next BBQ, I’ll probably still just tell you to throw stuff in a bowl.

Ingredients

☐ 1 (14 oz) bag classic coleslaw mix
☐ 2 packs ramen noodles (smash up in bag & discard seasoning)
☐ 2 cups dry roasted peanuts
☐ 6–8 green onions, chopped
☐ 3 small cups mandarin oranges, drained
☐ 2 tbsp sesame seeds

Dressing

☐ ½ cup vegetable oil
☐ ¼ cup rice vinegar
☐ 2½ tbsp soy sauce
☐ 1 tbsp sugar
☐ 1 tsp ginger paste
☐ 2 small garlic cloves, minced
☐ juice of 1 lime
☐ salt & black pepper to taste

Directions

Step 1 – Toast the Ramen, Sesame Seeds & Peanuts

Preheat oven to 375°F.

Break the ramen noodles into small pieces and place them on a sheet pan with the sesame seeds and peanuts.

(Optional: drizzle very lightly with olive oil.)

Roast for 8–10 minutes, stirring once halfway through, until everything is lightly golden and crispy.

Step 2 – Assemble the Salad

In a large bowl combine:

coleslaw mix chopped green onions mandarin oranges

Add the toasted ramen mixture once it has cooled slightly.

Step 3 – Make the Dressing

In a measuring cup or bowl whisk together:

vegetable oil rice vinegar soy sauce sugar ginger paste lime juice black pepper garlic

Step 4 – Toss and Serve

Pour the dressing over the salad and toss until everything is evenly coated.

Wine Pairing

A smooth Red Blend pairs beautifully with this dish. The bold fruit notes complement the richness while keeping the flavors balanced and delicious.
Make It Your Own

Salads are easy to customize depending on what you have on hand. Try adding nuts for crunch, extra veggies for color, or a little cheese for a richer flavor.
