Sassy Cassie!

For the past week, I’ve fed her twice a day, monitored her growth like a proud parent, moved her into a bigger house, gave her a bonnet, dedicated an entire cabinet to her, and taken 4,372 pictures of her progress. I’ve celebrated every bubble, worried over every slow rise, and convinced myself that this is all normal behavior.

This morning, Cassandra graduated to the “save the discard” phase of life, and tonight, she becomes my first levain.

I’m not going to lie. I’m a little emotional about it. Part of me feels bad taking this beautiful, thriving, overachieving starter and turning her into bread. But deep down, I know this is what she wants. She didn’t spend a week growing, bubbling, and showing off in her pink palace just to live forever in a jar. She wants to fulfill her destiny.

If all goes according to plan, Saturday I’ll prep and Sunday, I’ll be baking part of the strangest, most obsessive, and most fun hobby I’ve picked up in years.

Godspeed, Cassandra. I hope you grow into a beautiful loaf and you don’t suck.
