It’s Happening Friends

As predicted, Cassandra is THRIVING! I think this is mostly because I chose 1 source, and stuck with just that source…no Facebook forum scrolling with everyone saying what was done right or wrong, Reddit rabbit holes, just me and A Perfect Loaf…bonding with each other as Cassandra and I have the past week. She is ready. I will make a levain with her tomorrow night (Friday), get her into dough on Saturday…follow a bunch of steps that I have nerded out with and studied to learn in order so I don’t mess up a step. I am ready. Cassandra is ready. The world (ok maybe not the world but my own little world) is ready.

This is the book I have devoted my entire past week to. I’ve followed each step, scanned the included QR codes, watched the videos, and done no other research. The Perfect Loaf written by Maurizio Leo.

A lot of my readers are probably sick of me repeating myself blog after blog relating to my sourdough fam I created…I’m sick of me too. I am mostly making this post to share with others that are struggling to figure out sourdough, or that have been trying for weeks to make their starter work….cue Garth. My first sourdough starter sitting at roughly 2 weeks old and showing no signs of being even close to ready.

My friend Connie told me she had a friend trying to make yeast from scratch and has been at it for 40 DAYS!!! I can’t even imagine the frustration because it took me about 4 days to make a new starter because I was ready to bake bread and meant it.

Just to show it is successful, here is a picture of Cassandra striving after 7 days.. proving this book does work as long as you follow his instructions and keep your sourdough starter at an ideal temperature. Yes…she did wear a Makers Mark Christmas sweater in July, and if you think that’s stupid…well who is making bread with a one week starter and who is not. Pick your battles…because I’ve won mine.
