Spinach Artichoke Dip:

Snack dinner is one of my favorite kinds of dinners. Nobody needs a plate, nobody needs utensils, and everyone just stands around the kitchen eating for three hours.

This spinach artichoke dip is creamy, cheesy, easy to throw together, and perfect for game day, holidays, or a rainy Saturday at home.

INGREDIENTS:

☐ 1 (14-ounce) can artichoke hearts, drained and chopped

☐ 8 ounces cream cheese, softened

☐ ½ cup sour cream

☐ ½ cup mayonnaise

☐ 1 cup parmesan cheese, divided

☐ 1 cup frozen spinach, thawed and squeezed dry

☐ 2 cloves garlic, minced

☐ ½ teaspoon garlic powder

☐ ¼ teaspoon onion powder

☐ Salt and pepper to taste

INSTRUCTIONS:

  1. Preheat oven to 350°F.
  2. In a large bowl, combine cream cheese, sour cream, mayonnaise, spinach, artichokes, garlic, garlic powder, onion powder, and ¾ cup of the parmesan cheese.
  3. Mix until everything is combined.
  4. Spread into a greased baking dish.
  5. Sprinkle the remaining parmesan cheese over the top.
  6. Bake for 20–25 minutes or until hot, bubbly, and lightly golden.
  7. Serve warm with tortilla chips, crackers, toasted bread, or vegetables.
  • Squeeze as much liquid as possible out of the spinach unless you’re aiming for spinach soup.
  • Freshly grated parmesan melts better than the pre-shredded stuff.
  • This can be assembled ahead of time and baked later if you’re pretending to have your life together.
  • If serving for a crowd, double it. People attack spinach artichoke dip like it’s the last appetizer on earth.
  • Homemade tortilla chips take this over the top.
  • Pairs well with wine, playoff hockey, rainy Saturdays, and avoiding whatever chore you’re supposed to be doing.
  • Leftovers reheat surprisingly well, assuming there are any leftovers.
  • If your husband suddenly disappears during the cooking process, check the bathroom. He’s probably pretending to poop again.

This is one of those recipes that somehow disappears before dinner even starts. Every time I make it, people stand around the kitchen taking “just one more bite” until half the pan is gone.
