
I use this savory quinoa in my carne asada burrito bowls.
Ingredients
☐ 1 cup multi-colored quinoa (rinsed)
☐ 2 cups beef broth
☐ Big pinch of salt
☐ 1/2 tsp cumin
☐ 1/2 tsp Mexican chili powder
☐ 1/2 tsp onion powder
☐ 1/2 tsp garlic powder
☐ Olive oil (for finishing)
Directions
☐ Rinse quinoa in a fine-mesh strainer under cold water to take away the bitterness.
☐ Bring beef broth to a boil in a medium saucepan
☐ Add quinoa, salt, cumin, chili powder, onion powder, and garlic powder
☐ Reduce heat to low, cover, and simmer for about 15 minutes (until liquid is absorbed)
☐ Remove from heat and keep covered
☐ Let sit for 15 minutes
☐ Fluff with a fork and drizzle with olive oil
That’s it.
Nothing fancy. It just works.
It soaks up flavor, holds everything together, and makes it look like you didn’t just throw a bunch of shit in a bowl and hope for the best.
