Pickle de Gallo
Look at this. Just LOOK at it.
I made this out of curiosity and shit in my refrigerator, and now I’m questioning every life decision that didn’t involve making this sooner.
It’s crunchy, tangy, a little salty, a little fresh… and it slaps on burgers and hot dogs.
Like… if your burger is dry? Fixed.
If your hot dog is boring? Not anymore.
If you’re standing in your kitchen eating this straight out of the bowl with some chips? I am too.
This is basically pico de gallo’s pickle-obsessed cousin, and honestly… it might be better.
What’s in it:
- Dill pickles (chopped)
- Tomato
- Red onion
- Jalapeño
- Fresh cilantro
- Splash of pickle juice (don’t skip this…this is the money maker)
- Lime juice
- Salt + pepper
Mix it, taste it, adjust it, do your thing.
Throw it on burgers, pile it on hot dogs, or eat it straight out of the bowl. I won’t judge you.
P.S…You’re welcome. 😎
🍷
🥂 Perfect Match: Sauvignon Blanc
Bright and citrusy enough to stand up to all that pickle goodness without fighting it.
💰 Budget Bottle: Josh Cellars Sauvignon Blanc
Easy to find, easy to drink, and pairs surprisingly well with questionable refrigerator experiments.
🍷 Mama’s Choice: Pinot Grigio
Because if you’re making Pickle De Gallo, you’ve already accepted that you’re living outside the rules.
🍺 No-Judgment Choice: An ice-cold light beer.
Honestly, pickles and beer have been friends longer than most marriages.
💕 Wine-D Down Wisdom:
If you’re standing at the fridge eating Pickle De Gallo straight from the container with a fork, that’s called quality control and I support your decisions.
